- Grape variety breakdown
Crushing and Pressing: The handpicked grapes were gently whole-bunch pressed to extract the purest juice, minimising phenolic extraction and preserving delicate fruit flavours. Fermentation: Fermentation was carried out in a combination of stainless steel tanks and French oak barrels. The use of indigenous yeasts enhanced the complexity and terroir expression of the wine. Barrel Fermentation: A portion of the wine was fermented in new and seasoned French oak barrels to add depth and subtle oak complexity. Barrel fermentation also encouraged a soft, creamy texture through lees stirring (bâtonnage).

- Vineyard Notes
This High Eden vineyard site provides us an exceptional aspect of terroir for growing Chardonnay with cool nights, sunny days, and with an elegance purely defined by altitude. It is a Chardonnay that showcases lovely linear acid, expressing stone fruit and minerality due to shallow, acidic soils over rock.
The 2021 vintage in Eden Valley is widely considered to be one of the best in recent years. The ideal growing conditions, combined with the region's inherent ability to produce high-quality grapes, resulted in wines that are likely to be expressive, balanced, and age-worthy.
